I want to start to put an emphasis on the fact that most of what I am writing here are in my own words and the comments within come from me. I admit it is hard to put in my own words and I do encourage you to buy and read the book for yourself (then we can discuss it together). If you don't want to, well ... I'll do my best to help you out in any way that I can.
Let's begin. Whether we want to or not, we live in a land overflowing with Carbohydrates. For a carb addict it is like a pot smoker visiting Amsterdam (how can one resist their addiction). Ask your grand parents or do a little research of how it was in the early-to-mid 1900's. People ate a lot healthier then most of us are today. They didn't have processed food like we do today.
In our age, a new majority has emerged and they are called "Overweghtians". Just look around you when you're shopping, walking down a busy street, at a zoo (like I was recently) and just see how many people are over weight ... It's actually quite scary. On our recent trip to the zoo and just recently at our local Hot Ait Balloon festival I observed the people around us and couldn't believe how many people were overweight and even obese (you can imagine what they were eating as well ... what else can you find in a festival or the zoo to eat?). I felt a great pain inside as they probably don't know how badly they were harming themselves and stunting their lives.
Okay, back to the lesson. Dr. Joann E. Manson (and several colleagues) can be found in the Journal of American Medicine among other Medical Journals as saying that excess weight is a major factor in early death, cardiovascular disease, strokes type 2 diabetes, osteoarthritus, certain cancers. The High Carb Low Fat diet is the latest rage (and has been for the last 4 decades). Fat is calorie dense (containing 9-10 calories per gram of fat). Compare this to the low 4-5 calories contained in each gram of carbs and protein and you will see that this diet rage kind of makes sense. Don't you think? Big "Fat" NO! (pun intended) You will see why a little later on.

During the last four decades, the amount of overweight people in the american society made a dramatic increase. Today, one in four children are overweight and over 65% of adults are now labeled overweight. Don't take my word for it, click here.
Let us get to the basics so you can better understand the link between carbohydrates and being overweight. What are carbohydrates? Well you can click on the link above to find all about what they are and how they are made but let me write down a summary in case you don't have the time. They are simply long chains of sugars that are absorbed into the body at various rates. God provided us with our much needed carbohydrates by a natural process called photosynthesis. In such, this is the process in which helps the production of fruits, veggies, nuts, legumes and grains. Though today, the majority of the carbohydrate intake of our society comes from highly processed carbs.
We go out to grocery stores looking for the now numerous "low-fat" products yet most of us make up for that by "eating out". Here is another one of their kind contributions: Large buckets of soda. Here's a question for you, is soda good for you? Nope. Did you know that a normal 12 ounce can of soda can contain up to 39 grams of sugar (about 7-8 teaspoons)? Many people spend more money on fast food than on higher education, computers and cars. How many times a week do you eat in a fast food resteraunt? Would you be surprised to hear that some people go atleast twice a week and often much more? Why not? It's cheap and convenient. Here's an article that may interest you, it will mention how this fast food craze is affecting our young adults ... our future leaders: Science Daily. Average americans eat 3 hamburgers and 4 orders of fries a week (I'm sure Canada isn't any better). Quick stop eating has replaced (in the majority of cases) home cooked meals as our primary source of nutrition.
Most of the foods in these restaurants are either canned, frozen, dehydrated or freeze-dried. Unfortunately, this process on these already highly processed carbohydrates (deprived of most of their nutrients) destroy thier "natural" taste. So then, what do they do to attract their customers? Would you eat a burger that didn't "taste" like a hamburger? Welcome to the age of "Artificial Flavors" also known as "Natural Flavors". These chemically driven ingredients are what determines the taste of their food (oh, and I dare to say, as well as most of the highly processed foods you and I like so much). Let's summarize then ... Not only are these foods deprived of most of their nutrients and taste, now we've added chemicals to the mix to make them taste "better".
